Ecological advice and labeling system according to the Danish model
A prerequisite for success is that the canteens are supported in their conversion by appropriate advice. Denmark is a model for this with its non-profit foundation ‘House of Food’, which for more than a decade has developed concepts for better food and trained kitchen staff. The result: In Copenhagen alone, 70,000 meals are now prepared daily with at least 90 percent organic ingredients. According to the Danish government, the average organic content in more than 2,300 kitchens in the country is over 60 percent.
“Denmark is showing what is possible. More than 50 participants from local authorities at Naturland workshop
The first Naturland workshop on environmentally friendly out-of-home catering, attended by more than 50 representatives of local authorities and social institutions from all over Germany, also focused on advice and exchange of experience.
